What do you call a happy event followed right away by a crappy one? Everything balances in life? Don’t get too comfortable as something is going to happen and is not going to be good?

Let me explain why I ask.

My family and I recently went on a holiday. One afternoon, I went on a long walk while my husband stayed with the kids. It was a great walk. All by myself. Myself and my thoughts. Luxury!

As I was walking, I noticed two beautifully colored butterflies dancing around me. One had yellow wings with reddish edges and the other one was smaller and had a beautiful orange color.

Oh, how beautiful nature is, I thought while I enjoyed watching the butterflies dance. After a while, they flew away. A few meters further, I noticed in front of me a half-eaten ice cream cone dropped on the ground. Ugh, I thought. And I decided to kick it in the ditch. Wrong move! Instead of flying into the ditch as I hoped, the ice cream spread all over my right sandal, my right foot and lower leg. I ended up walking the rest of my walk with a foot that was sticking to my sandal each time I stepped on it. What a joy!

So, coming back to my question: what do you call this that happened to me? If you come up with something, please let me know.

The ice cream I kicked was a chocolate ice cream. My kids (and I) love chocolate ice cream, but during that walk I had many negative thoughts towards chocolate ice cream. So I decided to make a cold dessert that is opposite in flavour of chocolate: vanilla, of course.

This chilled vanilla coconut chia pudding was born from my negative feelings towards chocolate that day, but when you eat it there are no negative feelings left at all. All is good in the world. It is rich, sweet, coconut-y, and vanilla-y. Ooooh….

  • Healthy fats, fiber, protein, manganese, phosphorus, and calcium from chia seeds

Chilled Vanilla Coconut Chia Pudding
Ingredients
  • 800 ml coconut milk
  • 4 tablespoons chia seeds
  • ½ cup oats
  • ⅓ cup maple syrup
  • 1 teaspoon vanilla
Instructions
  1. Blend all the ingredients in a blender until well mixed. Wait 3 minutes and then blend again.
  2. The mixture will be runny, but it will thicken as the chia seeds and the oats soak up the liquid.
  3. Pour into bowls (I use ramekins with lids) and chill in the fridge for 1 hour.
  4. This pudding can be stored in the fridge for up to 3 days (but you won't be able to stay away from it for too long).
