Tasty Tuesday: Chilled Vanilla Coconut Chia Pudding

- 800 ml coconut milk
- 4 tablespoons chia seeds
- ½ cup oats
- ⅓ cup maple syrup
- 1 teaspoon vanilla
- Blend all the ingredients in a blender until well mixed. Wait 3 minutes and then blend again.
- The mixture will be runny, but it will thicken as the chia seeds and the oats soak up the liquid.
- Pour into bowls (I use ramekins with lids) and chill in the fridge for 1 hour.
- This pudding can be stored in the fridge for up to 3 days (but you won't be able to stay away from it for too long).
