Chilled Vanilla Coconut Chia Pudding
Ingredients
  • 800 ml coconut milk
  • 4 tablespoons chia seeds
  • ½ cup oats
  • ⅓ cup maple syrup
  • 1 teaspoon vanilla
Instructions
  1. Blend all the ingredients in a blender until well mixed. Wait 3 minutes and then blend again.
  2. The mixture will be runny, but it will thicken as the chia seeds and the oats soak up the liquid.
  3. Pour into bowls (I use ramekins with lids) and chill in the fridge for 1 hour.
  4. This pudding can be stored in the fridge for up to 3 days (but you won't be able to stay away from it for too long).
