For those of you that celebrate Easter, I wish you Happy Easter and I hope your Easter days will be filled with sunshine and joy!
As you see from the photo, we have snow on Easter, but this does not stop us from making yummy treats (vanilla coconut cupcakes with chocolate avocado frosting – recipe coming up) and colored Easter eggs. My son had a blast helping me in the kitchen, mixing ingredients for the cupcakes and coloring eggs (and his fingers).
