Tasty Tuesday: Heavenly dairy-free rice pudding

Heavenly Dairy-Free Rice Pudding
  • 1 cup brown rice, rinsed
  • 3 cups almond milk (or the milk of your choice)
  • 4 eggs (yolks separated from egg whites)
  • 6 tablespoons sugar (I used organic sugar from Costco)
  • 1 tablespoon vanilla extract
  • zest from 1 lemon
  • ½ cup raisins
  1. Cook the rice in milk in a pot on the stove.
  2. Mix the yolks with the sugar, vanilla extract, lemon zest and raisins.
  3. Beat the egg whites until fluffy and stiff.
  4. Once cooked, allow the rice to cool for 10 minutes.
  5. Mix the yolk mixture into the rice. Then gently fold in the egg whites.
  6. Grease an oven-proof round casserole (20 cm or 8 inch diameter).
  7. Pour the mixture into the casserole and bake at 350⁰ F for 30 minutes until the top becomes medium brown.
  8. Allow to cool for at least 30 minutes before serving.
  9. The rice pudding can be served warm, cold or at room temperature. It’s delicious anyway you serve it.
  10. Grate some chocolate on top to take it to a heavenly level.
