Tasty Tuesday: Yummy Baked Carrot Oatmeal Hearts for Valentine's Day

- 1 egg, beaten
- 1 ½ cup milk (any milk works; I used almond milk)
- ⅓ cup maple syrup
- 1 tablespoon vanilla extract
- 1 tablespoon oil (any oil works; I used organic canola oil)
- 1 ½ cup oats
- pinch of salt
- 2 teaspoons cinnamon
- 1 teaspoon baking powder
- ½ cup raisins
- 1 cup finely grated carrot (loosely packed)
- Pre-heat the oven to 375 F.
- Mix the wet ingredients in a big bowl. Add the rest of the ingredients, one by one.
- Pour the batter in a 8x11 inch glass dish.
- Bake for 40 minutes until the oatmeal becomes lightly brown on the surface. Turn the oven off and keep the oatmeal in the oven for 10 more minutes.
- Remove the dish from the oven.
- Enjoy warm or cold. If you want to make hearts allow the oatmeal to cool off. Then use a heart-shaped cutter to make the shapes.
- Enjoy!
- Leftovers keep well in the fridge for up to 3 days.
