Tasty Tuesday: Romanian Vegan Potato Stew (with a protein option)

Romanian Vegan Potato Stew
  • 2 tablespoons coconut oil
  • 1 onion, chopped small
  • 3 lbs potatoes, cubed
  • 1 big carrot, cubed (approximately 1 ½ cup)
  • 1 big green pepper, cubed (approximately 1 ½ cup)
  • 5 cups water
  • 3 bay leaves
  • ¼ teaspoon black pepper (or to taste)
  • 1 ½ teaspoon sea salt
  • ½ cup crushed tomatoes
  • 1 lb ground meat and 2 tablespoons coconut oil – optional
  • parsley chopped small, as garnish
  1. Sauté the onion in coconut oil over low heat for 10 minutes, stirring occasionally, until the onion becomes translucent.
  2. Add potatoes, carrots, green pepper, water, bay leaves, black pepper, and sea salt. Bring everything to a boil and simmer for 10 minutes. Add the crushed tomatoes and simmer 10-20 more minutes until all the vegetables are tender.
  3. If you want to add some meat to this dish, brown separately 1 lb ground meat (any meat works) in 2 tablespoons of coconut oil. When there is no more pink left, mix the meat with the cooked stew.
  4. Sprinkle parsley on top prior serving.
  5. Leftovers keep in the fridge for up to 3 days.
