Quick Homemade Chicken Noodle Soup
Ingredients
  • 1 lb chicken wings (see note)
  • 1 garlic clove, minced
  • 1 big carrot, cubed (1 cup cubed carrots)
  • 1 celery stalk, chopped small
  • 4 cups chicken stock
  • ⅓ cup dry pasta (see note)
  • Parsley
Instructions
  1. Add all the ingredients (except the pasta) to a big pot. Bring everything to a boil, and then turn the heat down to low and simmer covered for 20 - 30 minutes until the chicken is cooked and the vegetables are tender. Add the pasta to the soup in the last 10 minutes of cooking.
  2. Sprinkle with parsley when serving.

Any chicken meat works – e.g. chicken breast chopped in small pieces after being cooked in the soup

Any small pasta works. I use a gluten-free anelli pasta from GoGo Quinoa and my kids have fun finding the little circles in their soup.
