Christmas Vanilla Balls
Ingredients
  • 1 cup pecans
  • 1 ½ cup slivered almonds
  • 4 tablespoons cacao powder
  • 4 tablespoons unsweetened shredded coconut
  • ⅛ teaspoon cinnamon
  • 2 tablespoons coconut oil
  • ⅓ cup maple syrup
  • 1 tablespoon vanilla
  • Additional coconut flakes – for rolling the balls in
Instructions
  1. Process pecans in a food processor until crumbly, not fine (smaller pieces can be seen).
  2. Process slivered almonds in a food processor until crumbly, not fine (smaller pieces can be seen).
  3. In a big bowl, mix pecans, almonds, cacao powder, shredded coconut, and cinnamon. Add coconut oil, maple syrup, and then vanilla. Mix well.
  4. Taste and add 2 more tablespoons of maple syrup if you prefer them sweeter.
  5. Place in the fridge for 30 minutes so the mixture firms up.
  6. Form balls with your fingers. The mixture is a bit sticky, but not too sticky to form the balls.
  7. Roll each ball in coconut flakes. Alternatively, you can grind the coconut flakes to make them finer and to look like sugar. Then roll the balls into this fine coconut flake powder.
  8. Makes at least 40 balls (depending on the size you want to make them).
  9. Store in the fridge or the freezer.
