Quick One-Pot Colorful Vegetarian Chili
Ingredients
  • 3 cups green peas (frozen or fresh)
  • 3 cups corn (frozen or fresh)
  • 1 can bean medley
  • 300 ml pureed tomatoes
  • chili powder - to taste
Instructions
  1. Add all the ingredients in a big pot, bring to a boil, turn the heat down, and then simmer for 30 minutes.
  2. Taste the vegetarian chili and add more chili powder if you want a little bit of kick.
  3. Serve over cooked rice.
