My mom has made this salad since I was little on Christmas, Easter, and other special occasions. She does not usually work with amounts of ingredients, so I had to make it a few times until I came up with the right proportions. So if you want to make it for your family, use the recipe below and start by boiling potatoes, carrots, and chicken breast.

This chicken potato salad is a traditional dish in Romania. The name of salad in Romania is “salade de boeuf”. We use the French name (I don’t know why, but this is the name I have know since I can remember) which means “beef salad”, although this salad has no beef. At least my mom never made it with beef. She always used chicken. But you can use any meat you have on hand (turkey, beef, etc.).

Another fun thing about this salad is that we like to decorate it. We put the salad in a bowl, spread a thin layer of mayo on top, and then go to town decorating it. I decorated the salad minimally, as you can see in the photo. If you want to see pinterest-worthy decorated salads, all you have to do is to google “salade de boeuf” and you will see amazingly decorated salads.

I can’t think of someone who has tasted this chicken potato salad and did not like it. It is nutritious, filling, and a bit tangy. The dill pickles are the secret ingredient. They add a lot of flavour to the salad.

I usually make a double recipe and my husband takes some to work for lunch 2 days in a row and me while the kids and I eat it for lunch at home.

Traditional Chicken Potato Salad - nutritious, filling, and a bit tangy.
Ingredients
  • 500 g (17.5 oz) potatoes boiled and cubed when cold
  • 200 g (10.5 oz) dill pickles, cubed
  • 1 chicken breast, boiled and cubed when cold
  • 350 g (12.5 oz) carrots, boiled and cubed when cold
  • 1 tablespoon yellow mustard
  • ½ cup mayonnaise
Instructions
  1. Mix all the ingredients in a big bowl. Chill in the fridge for a couple of hours.
  2. Taste. Add more pickles if you want it tangier.
  3. Serve cold.
  4. The salad keeps in the fridge for up to 4 days.
