These 7 easy freezer meals come up in our meal rotation frequently as they are some of our favourites that we love to eat over and over again. I usually prepare a double batch of these meals. I freeze one batch and we enjoy the other one for two dinners in a row.

On nights when I do not have too much time to cook dinner, I pull one of these meals out of the freezer in the morning, let it thaw in the fridge until the evening, and warm it up to serve it to my family at dinner time.

Each and every one of these meals freezes beautifully for up to 3 months.

Without further ado, here are the 7 Easy Meals that Freeze Well:

1. Chicken Sausages with Green Beans and Carrots

You can use any type of sausages and the meal will still turn out delicious and flavourful.

2. Carrot Apple Curry Soup

This soup does not require any fine chopping. Chop the vegetables in big pieces. When they are cooked, blend everything with a food processor or a hand-held blender. Quick and easy!

3. Delicious Spaghetti Sauce

This sauce …. I have no words left about this sauce. Once you make it, you wonder how you lived so far without it 🙂 . All the people (my children, my husband, parents-in-law, friends) who ate it at my house raved about it.

4. Chicken Wings with Green Peas and Carrots

This is a meal that my mom made often when I was growing up. It is quite easy to make. Chop the carrots and celery, sauté them, add the rest of the ingredients, and simmer. It is delicious and ready in approximately 45 minutes.

5. Vegetable Borscht

Borscht is usually made with beets, according to Ukrainian tradition. However, in Romania I have never had borscht with beets, but with other types of vegetables such as carrots, potatoes, green pepper, celery, green peas. The Romanian borscht is in fact a hearty soup for which we use fermented wheat bran to make it sour. As my son can’t have wheat, I use lemon juice to make the borscht a little sour.

Beets or no beets, eating borscht is a great way to get vitamins and minerals, as well as plenty of fiber and water. Goodbye, constipation!

6. Coconut Curry Chicken Egg Tart

We ate this tart for breakfast (and as a snack) for many months, but lately it became our dinner staple – who says eggs, coconut milk, and chicken can’t be enjoyed for supper? Serve with a side salad, have a fruit salad (berries topped with coconut cream) for dessert, and you have the perfect nutritious meal!

7. Lentils Beans and Spinach Stew

Children are growing and their bodies need more and more iron as years pass in order to function optimally (especially girls during puberty). Studies show that almost 15% of children develop iron deficiency by the age of two.
